Grown above 4,900 feet close to the border of Mexico and Guatemala. The cloud forest, rich soil and shade canopy of the area combine to create the ideal coffee growing conditions for the development of gourmet coffee. This bright and rich coffee is cultivated using sustainable practices and processed by hand, then de-pulped, fermented, washed and finally dried in the sun. It gets its unusual name thanks to the many sightings of Jaguar within the region.

We offer this in a Medium Roast, developed to enhance the bright flavors within the beans of stone fruit and vanilla cream.
Peaberry beans are the result of a natural mutation found in under 10% of each harvest, which results in one bean developing within the coffee berry instead of the "Classic" two. The Peaberry bean, having not had to share nutrients with a twin, has a unique flavor profile which many consider to be superior.
